Go Bananas Nut Bread

I am BANANAS about Bananas! Anything banana is my kind of carrying-on! Enjoy this unique recipe for a sweet treat that has no oil or artificial sweeteners AND happens to be gluten-free!

Prep Time: 15 mins ~ Cook Time: 60 mins ~ Total Time: 1 hr 15 min ~ Servings: 6-8

Ingredients:

3 medium ripe bananas, mashed

1/2 cup raisins, optional

1 cup Medjool dates, soaked and pitted

3/4 cup raw walnuts or pecans, chopped

1 1/2 tsp vanilla extract

1 1/2 cups gluten-free flour

1/2 tsp ground organic cinnamon

1/4 tsp nutmeg

1 tsp baking soda

2 tbsp flaxseed meal or chia seeds

5 tbsp water

1/4 cup non-dairy milk

1/4 cup almond butter

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Create your flaxseed “egg” by adding flaxseed to the 5 tbsp of water and set aside.

Fill a measuring cup with 2 cups of hot water and add dates to soak for 5-10 minutes to soften. Once soft, remove from water, combine with non-dairy milk, and blend to a thick liquid.

Make your dry mix in a separate bowl. Add gluten-free flour, cinnamon, nutmeg, and baking soda to the bowl and combine.

In another bowl, create your wet mix. Mash your three bananas until the texture is gooey. Mix in vanilla extract, date and milk, almond butter, and flaxseed “egg.”

Pour the wet mix into the dry bowl. Stir together until there are no more dry flour spots. Add the raisins and nuts and fold the mixture to cover them in the batter.

Pour batter into a baking pan and bake for 55-60 minutes.
